Preparation
Cut the Gorgonzola into cubes and mix it together with fresh ricotta cheese until we get a soft mousse.
In a bowl, beat two egg yolks with 4 spoons flour, stirring constantly to avoid creating lumps, add ½ cup of milk, a pinch of salt, half a teaspoon of baking powder. Later beated the two egg whites until stiff and incorporate with the rest of the dough. Grease a pan and pour about a ladle of batter for pancakes, once cooked on one side turn them on the other side until they are beautiful colored.
